Spinach, Mushroom, Onion and Goat Cheese Quesadilla

Ingredients:

Goat Cheese (as much as desired)

2-3 cups Spinach

1 Medium-Large Red Onion

1/2 cup Sliced Mushrooms

2 large tortillas

Directions:

In large skillet, slice and carmelize onions in olive oil.

Add spinach and sliced mushrooms to onions.  Optional: add balsamic vinegar to veggies!

Spread desired amount of goat cheese on each tortilla.

Spread desired amount of goat cheese on each tortilla.

Remove veggies from pan (place on plate) and add bottom tortilla to pan.  Add veggies on top, then add the “lid” tortilla.  Allow each side to cook about 5-6 minutes.  If you do one full tortilla for each side it will serve two people easily.
