Blueberry Banana Baked Oatmeal

I found a recipe for something very similar on annies-eats.com and adapted it a little bit to how I liked it!

Blueberry Banana Baked Oatmeal

Ingredients:

1 cup old fashioned oats

1/2 tsp. baking powder

1 tsp. cinnamon

1/2 tsp salt

1/4 cup honey

1 cup skim milk

1 egg

2 tbsp light margarine

1 tsp. vanilla extract

2 bananas

1 cup blueberries

Directions:

Preheat over to 375.

In 8x8 baking pan, slice bananas and arrange them to cover the bottom.

Sprinkle with some blueberries.  I never measure these out...I just put as much as I like.  Can't have too many of those little buggers.

Combine all dry ingredients in a bowl and sprinkle over the top.

Combine all wet ingredients and pour over the top of the entire mixture.  Then top with the rest of the blueberries.

Bake 40ish minutes and you get this…

I usually bake this at the beginning of the week and then have breakfast for the week!
