What I Ate Wednesday

This week, I decided to show some of my best eats from home from the day I did my long run (20 miles, woo hoo!).  This was my first day home so we tried to hit some of my favorite places.

Pre and During Run: Pre run I had a banana and then used a Gu every 5 miles along the run (forgot the picture)

Breakfast: Surf Bagel Taylor Ham, Egg and Cheese on Whole Wheat Everything Bagel and iced coffee of course!

Lunch: We didn’t eat breakfast until around 11:30 so we didn’t really have lunch so much as a really delicious (really terrible for me) snack.  Arena’s Death Fries and a Blueberry Beer

Dinner: Surfing Crab Crab feast with shrimp and king crab legs!  This stuff was pretty much the only healthy food we ate all day, gotta love seafood!

Dessert: Because picking crabs doesn’t exactly satiate anyone!  Dairy Queen French Silk Pie Blizzard

Our dairy queen is right on the beach so we usually get that there and go down on the beach and hang out while we eat it.  This was especially great because we don’t have Dairy Queen in Charleston, crazy right?!

It is pretty easy to see how I gained about 5 pounds in a week, good thing I am back in Charleston and back to normal.  However writing this post has really made me miss home and made my mouth drip with longing!!

What I Ate Wednesday

This edition comes from my Monday eats and has some pretty great things in it if I do say so myself!  Monday was the day I was doing all the wheel chair sports and horseback riding, etc so I was super busy, which lead to be super snacky!

What I Ate Wednesday: Long Run Day

A few days ago my mom told me that my grandparents (who read my blog, I love it!) were concerned that I didn’t eat enough to be going out running 15 miles.  I told her that my usual WIAW posts are for typical days, not long run days.  I thought that this would make an interesting WIAW post.

Breakfast: Whole Wheat Breakfast Burrito with Asiago Chicken Sausage, egg whites and 2 whole eggs, onions, green peppers, mozzarella cheese and spinach

2013-06-22 11.08.46Because of the late wake up call (for once on a Saturday, we didn’t eat breakfast until like 11:00 so after the farmers market I set out for a run at about 1:30.  I kinda missed lunch but went on the run with a few energy gels to help me make it when I get back.  My goal is always to have one every ~10k but to split it evenly, I had one ever 5.5 miles and it worked perfectly.

NY Strip, Jasmine Rice and squash

I am completely obsessed with jasmine rice now, it has its own subtle flavor so you don’t even have to add anything to it.  We usually don’t make much good steak because it’s so expensive but it was on sale this week so we get enough for Casey and I for like $10!!

Dessert: I embarrassingly ate an entire pint of Ben & Jerry’s!!  Whoops!  Oh well, it was delicious and I “earned” it.
2013-06-22 21.50.25At least it was the fro yo version.  My absolute splurge Saturday inspired my Swap it out Sunday post this week.  This is typically not the way I replenish my calories post long run so I will have to do another post that is more true of the normal soon but hey, live life right.  I run to eat sometimes, Saturday was just one of those times!!

WIAW: Apparently Sausage Edition

Yesterday was pretty busy, and was a hot yoga day which meant lots of water and more food since its a big calorie burner!!  I have decided to do my WIAW based on Tuesday so I can do that post before late at night when I am done eating for the day, makes total sense!

Breakfast: Sundried Tomate Chicken Sausage with egg whites, spinach, mushrooms and a teeny bit of skim mozzarella cheese

I am really making a valiant effort to not eat cereal every day.  I love cereal so it will still be a staple, but If I can sub things like this or over night oats a few times a week, I view that as a win.  Plus I stay fuller longer at school when I have had one of these options.  I was inspired to try to make a “breakfast bowl” by PBfingers.com.  She always has these great egg creations and I finally decided to try it, and it really doesn’t take that much longer to throw it together.  I PROMISE!!

Morning Snack: Sugar Cookie; I went by my school mailbox and my friend and ex-roommate 😦 had her white coat ceremony Friday (congrats to her) and her mom’s friend had made this cute little white coat cookies and she brought me one!

I got home from the endeavor with the flood and was so tired and didn’t feel like figuring something complicated out.  I just sauteed everything up in the same pan and added the rice that was left over from dinner the night before.

Night Snacks: Fig Bar, a few Teddy Grahams before I realized I really wanted Kettle Corn with some Dark Chocolate Almond Milk (great sweet/salty combo)

Today was super productive which is good because I was planning to have tomorrow to study as well but Casey’s friends are going to get here at around 7 am so there’s not a chance I will be accomplishing anything else during this break.  This is kinda of liberating knowing I have 5 straight days where I am not going to force myself to learn ANYTHING!!  Anyways:

I stopped by my old house after clinic and saw my old roommate and the new girls living there.  It was so weird that someone else was living in my room and that that wasn’t my home anymore.  After that little detour (Beth and I get pretty chatty sometimes all the time) I didn’t get home until 9 and Casey still wasn’t home so I threw together a quick stir fry and called it a day.

I have to share this story as well.  This story is about a patient I have been working with in our free clinic for the past few weeks.  He is amazing, as is my friend Nathan.  I seriously feel like a better person just by knowing him.  If you have a second, please read this; it will lift your spirits and give you a little more faith in the world!

What I Ate Wednesday

Today was super productive studying/school wise which is good since yesterday I didn’t have a second to crack a book at all.

Breakfast: Gingerbread Coffee and Special K Chocolatey Strawberry cereal with Almond Milk

I put in a good hour or so studying and then hit the road for my quick 3 miles easy.  Right at the two mile mark I got stopped by the train (womp, womp) which was so annoying since I was almost done.  However I have gotten stuck at this spot on mile 18 of a 20 mile run and that was much more frustrating.

When I got home and showered, I remembered I had to return all of the equipment to Comcast or else I was going to have to reschedule the disconnect, which meant calling them and quite frankly, I would rather chew off my own fingers individually than call that company!!  So I loaded Scarlett in the car (she loves car rides) and set off across the bridge.  I was in and out in 5 minutes which I was not expecting, pleasant surprises.

Lunch: Lean Cuisine Margarita Pizza (sometime you just have to microwave food)

Post lunch I hunkered down, got some more good studying done.  Read some more of my book (Lone Wolf by Jodi Picoult, its okay but I’m not thrilled about it).  Read a few Runners World articles (the one about Kara Goucher and Shalane Flanagan was awesome).  Had a few snacks before heading to the clinic.

I rode my bike over to school (weird that I can’t just walk now) but the ride was a leisurely 10 minutes and it was a gorgeous evening.  A patient brought White Chocolate Macademia Nut Cookies just to say thanks which was so sweet!  I forgot to snap a picture but it was incredible!!

That was only the beginning of the amazing night I had in the clinic.  A guy I have been working with walked safely in his prosthetic limb all over the clinic.  At one point he yelled out, “Look at me everybody, I’m walking!!”  It literally brought tears to my eyes.  Overall it was just another successful night in the clinic, one that reminded me why I am spending all of this time studying and working so hard.

By the time I got home from clinic I was ravenous as I always am since I am not usually home until about 8 or 9 o’clock.  I munched on some watermelon while I prepared dinner and dessert!

These are a major sweet tooth fixer but I had to have some almond milk to follow the sweetness!!  So amazing though!

So I have to apologize in advance for the especially crappy pictures this go around.  It was an incredibly busy day and I was just frantically trying to get these in.

Lunch: We had a lunch meeting, pot luck today for the board of our student run free clinic.  These things are always a challenge but I did the best I could to be pretty healthy and keep my portions small.  I filled half my plate with veggies and fruit and then took small portions of the mac and cheese, bbq and a mini chocolate chip cookie.

Dinner: We have a weekly dinner with our friend’s Lindsey and Clay and this way Clay made what he called Chicken Bog (Chicken, rice, veggies and a few small slices of hot smoked sausage) and lima beans (also known as butter beans in the south).  It was fantastic!  Looks really weird in pictures though I know.

Dessert:  After putting in a solid 8 miles today I decided I could reward myself with a little bit of ice cream Casey got.  Love using a small bowl to make it look like I have a lot of ice cream even when it isn’t much!

At run group tonight, we also showed our support for Boston taking our picture and posting it to the Run for Boston facebook group that was collecting these pictures from all around the world!!  What a remarkable turn out, it was awesome to peruse the site and see how many people participated today.  Made me feel better about my faith in humanity!!2013-04-17 18.48.43

Very First WIAW

PAfter reading several blogs for a while, I have noticed a lot have a What I Ate Wednesday post every week.  I like this because after losing a significant amount of weight people often ask me how I did it.  What I eat, how I work out, etc.  It’s not a magical equation, I can tell you that…its healthy eating and dedication to exercise.  But I thought the best way to answer these kind of questions would be just to show them!

I literally felt like I was eating all day and I still didn’t reach my calorie goal based on myfitnesspal.

I am big on having medium sized meals with lots of healthy snacks throughout the day.

Breakfast: Chocolatey Strawberry Special K with Almond Milk and Pumpkin Spice Coffee

Lunch: Salmon Cakes (runners world magazine) with chili sauce

Snacks: Banana with Peanut Butter Greek Yogurt Dip, pineapple, grapes, carrots with hummus

Dinner: Garlic Shrimp and Bean Stew (runners world)

Snacks: Honey Teddy Grahams (my favorite snacks), Light n’ Fit Vanilla yogurt with Bare Naked Fit Granola, Maple Mini Wheats

After doing a lot of walking around town and running with the group I had a lot of extra calories today that I couldn’t have eaten if I tried (as you can see I was eating a lot).  The other thing I stick firm to is portion sizes so I can have a lot of snacks (but smaller ones).
