Today was a crazy busy day that shouldn’t have been.  I only had my seminar class this morning and went to see a patient for an hour and those were my only obligations.  However, I was gone all day and barely got anything productive done!

After doing a bunch of errands and finally getting ready to sit down to get some work done, Casey asked if I wanted to take Scarlett to the beach, which of course is wayyy more fun than doing case studies so of course I said yes.

I took my camera and took a ton of pictures.  Scarlett absolutely looooves the beach so you can tell she is super excited in all of them!

We didn’t end up getting home until it was dark and Casey was too hungry to run with me so for the first time in 17 weeks I missed a run.  It was only 4 miles and we walked on the beach for about an hour so I think I am good.  Especially this close to the race.

We also didn’t feel like cooking so we threw on some clothes and headed to a place called The Craftsman.  The food was really good and they have a ton of beers.  They offer 8 or 16 oz sizes which is awesome.  I really just wanted to taste one and the 8 oz size was perfect for me.

The food was fantastic and was fairly in expensive which is great (and rare in Charleston).    I also didn’t feel super unhealthy when we left, as I often do leaving restaurants.

Enjoying the View

Today was one of those blisteringly hot Charleston summer days that we haven’t seen many of this summer, thank goodness.  For that reason, I headed over to the gym to just tough it out on the treadmill.  Today reminded me especially why I was getting up early to run all summer!!

After my run, I decided to take the long way (the very long way home) around the battery for a leisurely bike ride.  I run the battery all the time but I am usually focused on running and only enjoy the view for brief moments in between.  When you live your life like this…

…sometimes you just need to make time to take the long way home.

It was so awesome.  I cued up some Jack Johnson pandora radio on my phone and just cruised around loving the view.  Until I made it to the market and out of no where it went from blue skies to POURING, FLOODING, MISERABLE rain!

I huddled under an over hang and chatted with my mom until it slowed down enough to make a break for it (about 2 miles).  My wonderful plan failed miserably at the end, but at least I didn’t really have anywhere to be so I didn’t have to stress out about it.  So much for trying to do a good thing!!  Best intentions and all.

What I Ate Wednesday: COMPS DAY

Monday was the big day (in case anyone missed that if thats possible).  That meant getting up a little early to get a good hearty breakfast in.  The last thing I want is to be the girl who’s stomach is rumbling so loud in a huge exam room that everyone can hear it!  Boy do I have a recipe for you.  Nothing earth shattering (as far as creative) but the proportions were PERFECT!!

Breakfast: Peanut Butter, Banana and Honey Oatmeal

This stuff has some serious staying power.  I even made it again for Casey and I for breakfast today and he loved it!

Ingredients:

1/2 cup old fashioned oats

1 cup almond milk

dash of salt

1 tbsp natural peanut butter

Honey to taste

1 small banana (or 1/2 large), sliced

dash of cinnamon

Directions:

1.  Bring almond milk to slight boil then add oats and stir.

2.  Reduce heat slightly and occasionally stir until oats are thick and creamy (about 10 minutes).

3.  Reduce heat to low and stir in peanut butter and honey.  Allow to marry while slicing banana.

4.  Stir in banana and serve with desired about of cinnamon on top.

Lunch:  Vanilla Nonfat Yogurt with Pumpkin Flax Granola and a Peach (I was so full until like 2 from breakfast I could barely even think about lunch!)

We had to get to the store Monday afternoon because we barely had any food left so before we went I have a quick snack to keep me from buying things we didn’t need.

Dinner: Almost Summer Wrap from Black Bean (again!!); when I finished my long run at my friends house we either had to leave there right then or stay for the fantasy draft; we opted to stay.  Everyone else was getting Chinese food but this close to race time I didn’t really want to eat that so Casey so amazingly made a special trip to Black Bean to get me my wrap!

Monday turned out to be a pretty healthy, packed with power food day!!

Pure Bliss

Yesterday was purely awesome.  It was such a relief to be done with a test that has been stressing me out off and on for about two years!!  And amazingly I improved my score pretty significantly from when we took the practice exam in May which was awesome.

The rest of the day was pretty good, other than having a three hour class after (I was barely there mentally for sure).  I was able to make up my 12 mile LSD run from Sunday that disintegrated and it went beautifully (as it should have).  The weather was perfect and I got to run to a friends house and end there so I didn’t have to do an out and back which is nice whenever I can work that out.

Once I got there and showered, it was DRAFT TIME.  I had a draft last night and another one tonight and I am pretty excited about both of my teams (though sad I don’t have 1 single Eagle, womp womp!

To top off the past few days being awesome, I got to go to Lindsey’s FINAL FITTING for her wedding dress.  Unfortunately pictures can’t be shared for obvious reasons but she looked stunning and I can’t wait for her big day (as if I already wasn’t excited)!

I am sure I will come down from cloud nine soon, but for now I am just gonna hang out up here and enjoy the view.

Swap It Out Sunday and An Awesome Weekend

For this week’s swap, it is less of a swap than an add.  They are a staple for us.

Of course my beloved Overnight Oats require these little guys but you can really just them for so much.  You can just add them to smoothies, yogurt and granola, cereal or really anything you can think of.  With about 25 calories in 1/2 a tablespoon, it is worth adding for all the amazing benefits.  They are high in fiber, great for digestion, there is preliminary research that it helps to lower cholesterol.  I am a huge advocate for these guys for sure!!

Saturday

Saturday I fit in a quick run, went to a class BBQ at one of my professor’s houses then headed up to the wedding shower.  I had set my alarm early to get my long run in but it was thunder storming so I just did some shifting around of runs and put something shorter in once the thunder and lightning stopped.

The BBQ was so fun and I took Scarlett who had the greatest time playing with her friend Leo and some new pups she hadn’t met before.  She was such a muddy disaster by the time we left!

As soon as I got home, I did a quick change and we hit the road to head to the shower. I am so excited to finally get to share our gift here.  I couldn’t before because I couldn’t risk the bride catching a glimpse of it!

We had such a great time just munching and chatting.  I didn’t do any drinking because I was the chauffer but everyone else enjoyed some nice beverages.

By the time we got home I was ready to crash…I think I was asleep before my head even grazed the pillow!

Sunday

We had a fairly lazy morning.  I got some studying done, read a little of my book, had a cup of coffee and then we headed to get some brunch at The Lot.  The food was fantastic and I did a good job making healthy choices (well I thought anyway)!  I got an omelet with squash, spinach and cheddar cheese topped with Kale with oranges on the side.  Sounds pretty good right…and it tasted amazing!

However, when I came home I left to run (about 2 hours after eating) and had hands down, no questions asked the worst run I have ever done in my life!  I threw up three times, at one point my vision was going blurry and I cut it short by about 5 miles.  I literally did not have a choice.  Even now about 4 hours after getting home my stomach still feels super acidic and I am shaky.  WOMP WOMP!!  The weather was amazing, I hadn’t had a sip of alcohol since my glass of wine after my 20 miler last weekend so I have no idea what happened, but it was no bueno!

I have decided to just make it up tomorrow.  I had moved Monday’s tempo run to yesterday, so I will just call todays run my “4 miles easy” and do my 12 miles LSD tomorrow, hopefully with a more fortunate result.

For now I am putting the run behind me, casually reviewing my notes and trying to relax because tomorrow is the big day.  9 am tomorrow I will be taking my 150 question comprehensive (over two and a half years) exam, no big deal right?  So if you think of it send me some love at about that time, I will GREATLY appreciate it!  One step closer to the end!

Nutrition Slip

At some point in the last week I kind of forgot that “oh yeah I am running a marathon in two weeks” thing.  I mean I haven’t forgotten about the actual running of the race but more the nutrition focus I usually work on during the taper weeks.  So without thinking last night I made this absolutely fantastic Peanut Butter Chocolate Chip Cake.  I also made this in cupcake form for the super bowl, but hadn’t made it since.  After dinner last night, Casey and I picked this off my pinterest food board and I made it for dessert.

This morning when I realized my blunder, I got up and made a wholesome breakfast with a bit more nutritive value.  Pbfingers blog had Banana Bread Protein Pancakes that I had been wanting to try.  They were super easy and the recipe is made for one person so I don’t have 10 left over pancakes either!

I am pretty scared of cottage cheese (the consistency bugs me out) but you can’t tell it is in there at all…it blends right in.  These really kept me full for quite a while.  I ate them at about 9, had an eye doctors appointment at 12 then went straight to the gym to run (yes on the treadmill, it was super hot out) and still wasn’t really that hungry when I got back at 1:30.  I’d say thats some serious staying power.  I think I am going to try the Pumpkin Protein Pancakes tomorrow after my long (well long-ish) run in the morning.

All this talk about cake and nutritious breakfast made me think of the Bill Cosby skit…

Tomorrow will be a busy one too.  I have to get up to get my run in early (before the heat gets to me).  Then I want to hit the farmers market because we didn’t go last week, then one of my professors is having a cook out at his house in the afternoon with the grand finale of the wedding shower to top off the night.  It will be a big day of tempting food but I am going to try to not forget about that running a marathon thing again and focus on eating smart while I am at all these events!

WIAW: Back to School (FOR THE LAST TIME)

I reluctantly (VERY reluctantly) returned to school today.  Luckily for the LAST TIME EVER!!  My last class day is October 4th so the count down in on my friends! I actually will probably add an official count down to the side of my page to mark this most momentous occassion.  I know it will come fast and furious too because the next few weeks look like this:

August 30-Sept 3 Labor Day

September 8th: Allentown Marathon

So pretty much I need to work one day at a time and I will be there before I know it…plus there is a lot of fun interspersed throughout this not so fun time which will help greatly!

Anyway, yesterdays dining looked was quite good if I do say so myself.

Afternoon Snack: Fruit Smoothie (Almond Milk, strawberry, blueberry, pineapple and banana) and Fiber One Brownie (they are surprisingly fantastic, especially the cinnamon one)

Dinner: After getting home from clinic, neither Casey or I felt like putting the effort in to cooking something so we ran out to Black Bean Company and I got an Almost Summer Wrap (Turkey, Goat cheese, mixed greens, candied almonds and mandarin oranges, YUMM!) and Greek yogurt with granola (they have the creamiest most fantastic greek yogurt at Black Bean)

I would call that a pretty delicious day in my world.  I would eat that wrap every meal for a week at least if I could, it was seriously life changing!

Work Out Change Up

Yesterday I blew it again with my swap it out sunday post so here it is…

snacks

This one is a no brainer for me.  For 120 calories you can have 8 potato chips or an entire bag of kettle corn.  DUH!!  Plus you get the salty and sweet vibes from the kettle corn so its a win win.  I must really really like kettle corn because I am pretty sure it is the second time I have used it as a substitute snack!

Today, I was the very image of domesticity.  I made bread for the very first time and it came out amazing.  I made them as dinner rolls so that I could make Croque Monsieurs.  I have never made them before but saw a recipe for them on pinterest and though I would enjoy the trip back to France where I had my very first.  Early in the day I went through the roll making process which was a long one…knead dough, let rise, cut dough, let rise, finally bake the dang rolls.  Thank god they were amazing or there is no way I would ever make them again.  They are going to be a new staple for sure, and the frozen rolls are now out of the question for thanksgiving.

After making the bread, I took a crack at making rice pudding.  It is Casey’s favorite, his grandma used to make it so I know I will never live up to that.  Plus mid way through making it, I spilled all of my evaporated milk when the can opener jammed so I had to totally wing it with regular milk.  I haven’t tried it but if it by some stroke of luck turns out well I will post the recipe (if I can remember what I did).

Once that was done and in the refrigerator, I took Scarlett out real quick before heading for my run.  However, the next door dog heard her and wanted to come over to play.  An hour later I was still watching them chasing each other around the back yard.  Next time I will have to get pictures, they are precious together.  By the time they left, Casey had come home and wanted to run with me.  So instead of doing my hill intervals, we ran the bridge, HARD.  I figured if I ran it at race pace it would still be getting 2.5 up hill miles in and pretty fast.  It was the only speed work session I have changed and because we ran it hard I think it was a fair substitute.

After getting home, dinner came together in less than 20 minutes.  Visit Lauren’s Latest for the recipe.  We also tried her Pad Thai a few nights ago which was also incredible!
