What I Ate Wednesday

This edition comes from my Monday eats and has some pretty great things in it if I do say so myself!  Monday was the day I was doing all the wheel chair sports and horseback riding, etc so I was super busy, which lead to be super snacky!

Breakfast: Blueberry Cobbler Overnight Oats and Coffee

Lunch: Carrots and Hummus (while waiting), Boca Burger on Wheat Toast with 2% American, Honey Crisp Apple

Dinner: Parmesan Chicken Risotto with Spinach and Mushrooms (I will post this recipe tomorrow, it was AMAZING, if I do say so myself)

Dessert: Double Churned French Silk Ice Cream
2013-07-08 20.55.53Man I just love ice cream!!  At least this is half the fat (and not a whole tub of Ben and Jerry’s)!

Half way through the week!!  Woo Hooo!

  1. I bought a tub of hummus from Costco (aka BULK SIZE) two days ago..and..it’s almost..GONE!! OH my gosh I have been eating so many carrots and pretzles with it!! I’m addicted hahaha.
