Pet Peeve!!

This will be one of my shortest and sweetest posts.

This drives me BAT S*** CRAZY!!  There was a corral like 3 spaces away!!  I ran 5 miles before the sun came up this morning and you can’t walk your cart 20 feet.  I am not saying that you have to run a marathon people but at least exert yourself enough to replace the cart in the corral OR if we start really talking crazy take it back to the front of the store!!

This makes me even more angry!!  The yellow lines are there so that a person that has a wheel chair lift or other device can use that space to get their chairs out and be able to get into the store. These carts being here make these spaces unusable by these individuals.   Just because it isn’t a direct parking spot doesn’t mean this isn’t interfering; this may (in my very humble opinion) actually be worse!!

Unfortunately, I am doubting any one that actually follows and reads my blog actually does this so I am ranting to the wrong crowd but I just had to get it out!!

Fresh Herb 3-Cheese Pasta

Saturday at the farmer’s market Casey and I finally pulled the trigger and purchased some fresh pasta.  I couldn’t believe how cheap the plain pasta was.  A single serving ball was ONE DOLLAR!!

We also got ravioli to try: Southwest (blackbean, tomato and cilantro), Sweet Potato & Gorgonzola and Goat Cheese, Artichoke & Capers.  I can not wait to try all of these and their list of options is so long, I want to try them all!  The stand is called Rio Bertonini’s.

For dinner last night we made…

Chicken and 3 Cheese Herb Pasta

Chicken and 3 Cheese Herb Pasta

Ingredients

1 tbsp olive oil

1 tsp crushed garlic

1 small onion, diced

3/4 pound chicken tenderloin

To taste: pepper, crushed red pepper flakes, oregano, parsley, adobo

20-30 cherry tomatoes, halved

1-2 cups spinach

4 oz. pasta of your choice (we used fresh Herb Pasta)

1/4 cup 3 Cheese Blend: Asiago, Romano and Parmesan

Directions

1.  In large skillet, combine olive oil and garlic and allow to heat 2-3 minutes.

2.  Add onion and allow to soften slightly.

3.  Add chicken to pan and season all contents with all seasonings to taste.  I would say ~1/2 tsp of each with a little more on the regular pepper and adobo, but this is totally to your preference.

4.  While chicken is cooking, place pot on stove to boil.  Add pasta once water is boiling.

5.  Once chicken is almost cooked, add cherry tomatoes, cover and reduce heat to medium low for 3-5 minutes.

6.  Drain cooked pasta and put back in pot.  Add cheeses and mix well (with stove off).

7.  Add spinach to chicken and tomatoes, stir and recover to allow spinach to wilt ~2 minutes.

8.  Serve pasta with chicken and vegetable mix on top.  Optional garnish with a little more cheese!

ENJOY!!

2-3 servings (depending if you are feeding Casey or me)

This was the perfect meal to prep me for my hill intervals this morning.  Next week we are going to get the Sriracha pasta and use it like Lo Mein noodles in a stirfry.  I sense another recipe in the making!

Swap It Out Sunday

This week, I have another swap for health not necessarily calorie benefits.  In this country we have a huge problem with added sodium lending to our high blood pressure epidemic!

We try our best to avoid pre-packaged foods, but it is inevitable at times.  We use a lot of broths, rices, seasonings and beans when we cook so we opt for the reduced sodium versions ALWAYS!!

With little to no taste difference, next time you grocery shop, choose your reduced sodium versions of the everyday things you eat, your body will thank you!!

 

If I ever get rich

Tonight while enjoying our Spicy Coconut Chicken Curry from Greens & Chocolate we watched an episode of Tree House Masters.   Before I get side tracked about the show, the curry was really good.  I would probably leave out the green beans and add onions if I made it again, but over all fantastic.  Her proportions on the curry were perfect too, you got the curry flavor without burning your tongue off!

Anyway, if you haven’t seen this show, you have to check it out!  It is amazing.  I feel like you probably have to be Prince George (descendent of William and Kate if you have been living under a rock, if you need more than that, shame on you) to be able to afford these things but none-the-less incredible!

Senioritis?!

Over the weekend when we were driving back to Charleston it really hit me how close I am to being done with the classroom part of school (October 4th baby!).  With that came my absolute, 100% lack of motivation to get anything done.

Yesterday, I was done class at 12:00, leaving me until 6:00 when I had to go to clinic to get things done.  In that time I: took a nap, studied neuro for about 30 minutes, picked up Casey, went to two grocery stores and read runners world.  Not exactly the productive afternoon I had planned.

What is it about getting closer to a goal that just makes accomplishing it so much harder.  I swear it is like an exponentially declining relationship of being able to be productive.  This is especially bad timing because…

Sunday: Parkinson’s project due

Thursday: Neuro Final (cummulative, yikes!)

Friday: Peds exam 2 (this class goes into the fall semester)

Monday: start Constraint Induced Movement Therapy Camp

Tuesday: Practice Management Final

Wednesday: Differential Diagnosis Final (last one); Casey’s birthday

Friday: end of camp, finally break!

So that pretty much means that my days need to look more like they have today.

After ending class at 11, I came home and whipped up some lunch so I could eat and get right to work.

This must have done the trick because I have studied for 3 hours, worked on my project, made all sorts of necessary phone calls.  I think I am naming that salad “Motivation on Greens”!

Hopefully this day of motivation can continue through next week but I don’t have my hopes up too high for it!

What I Ate Wednesday

This week, I decided to show some of my best eats from home from the day I did my long run (20 miles, woo hoo!).  This was my first day home so we tried to hit some of my favorite places.

Pre and During Run: Pre run I had a banana and then used a Gu every 5 miles along the run (forgot the picture)

Breakfast: Surf Bagel Taylor Ham, Egg and Cheese on Whole Wheat Everything Bagel and iced coffee of course!

Lunch: We didn’t eat breakfast until around 11:30 so we didn’t really have lunch so much as a really delicious (really terrible for me) snack.  Arena’s Death Fries and a Blueberry Beer

Dinner: Surfing Crab Crab feast with shrimp and king crab legs!  This stuff was pretty much the only healthy food we ate all day, gotta love seafood!

Our dairy queen is right on the beach so we usually get that there and go down on the beach and hang out while we eat it.  This was especially great because we don’t have Dairy Queen in Charleston, crazy right?!

It is pretty easy to see how I gained about 5 pounds in a week, good thing I am back in Charleston and back to normal.  However writing this post has really made me miss home and made my mouth drip with longing!!

When the Rubber Meets the Road…

…Or the elbow meets the pavement!

This morning’s run started a little sluggish.  I am transitioning back to early morning running and after 7 yasso’s yesterday evening my legs were feeling a little toasted.  It had barely been 12 hours since I had finished the last run.  By mile 2 or so I was loosened up and finally enjoying the easy run.  However, there will be some yoga to follow this post to stretch out my super sad hamstrings!

With out about a quarter mile to go I turned over my left shoulder to see if there were cars coming so I could cross the road and BOOM, down I went.

I am not sure how I managed to get the front of my wrist and back of my elbow, but I guess it is possible.  The scrapes weren’t the problem though, it really took a turn when two cops pulled over and three runners near the bridge came to see if I was okay.  Talk about a bruised ego!

Ironically, I had been thinking in my first mile I didn’t have any good blog material for today.  Be careful what you wish for!

Trip Home in Pictures

So first off, I am sorry for being the worst blogger ever.  Those few days at home were an absolute whirlwind.

Many of my food endeavors will be captured in my WIAW this week so I will skip the redundancy there.

Post 20 mile run, we went to Surf Bagel for breakfast (my absolute favorite) and then I took Casey around downtown Rehoboth, went shopping, had a beer at a local bar/restaurant (Arena’s).  We headed home mid afternoon and went to pick crabs!

I have missed this so much.  I love a good southern oyster roast, but nothing beats picking crabs.  This was Casey’s first crab picking adventure and of course my mom and I competed to teach him the ‘best technique’.  What ended up happening though was that my dad was the best and he learned by watching him rather than listening to either of us blabber on.  (Mine is clearly the best, it was just too sophisticated for a beginner!)  Just kidding!

First thing Friday, I took Casey to the cafe (Cafe Azafran) in downtown Lewes where I worked for part of high school.  I got my absolute favorite, baked oatmeal with steamed skim milk and Black Magic coffee.  It was so hot and I was sweating bullets the whole time but it was perfect.

The afternoon held a trip to the beach with my friend Megan where Casey and I realized we have become southern babies about the cold northern water, CHILLY!  After walking the beach and seeing all my old friends from the beach patrol (man I miss those days), we went home for a barbecue my mom put together so we could see all the family.  I swear she made enough food for 50 people, there were about 15!

After stuffing my face for a few hours, a few friends of ours that used to live in Charleston but now live in Maryland made the trip over and we met a friend of mine from college out in Rehoboth.  We started off at the token Rehoboth bar, the Purple Parrot.  I think the boys were a bit flustered but we had a great time.  Then we took the Jolly trolley over to Dewey and went to the Starboard for a few Orange Crushes (my summer favorite).  I was able to see so many people I knew, I honestly felt like a minor celebrity.

Saturday morning brought an early morning run, a hair cut and a last breakfast with my mom where my little brother has his first job!!  I can’t believe he is old enough!!!!  Then we hit the road to head north for the wedding.

The wedding was incredible.  The venue was awesome, it was an old theater.  We came into a receiving area, then went up to a room for the ceremony, then went to the balcony area for a cocktail hour where you could over look where the reception was going to be and then we headed down to the main theater area for dinner and dancing and surprise band LAURA LEA!!  This is a band we used to go see every Wednesday at the Starboard for as long as I can remember so getting to see them and being with all the people that mean the most to me made the trip 100% worth it; absolute cherry on top of a truly unbelievable trip.

Sunday morning was back to reality and the dreaded trip back.  It didn’t go very smoothly but I luckily felt pretty great considering the circumstances.

If you made it through this whole thing, my mind is blown!!  Today’s return to reality (and speed work) was not welcomed, hopefully tomorrow with set me back in a better routine!

20 miles in the Hometown

It is rare that I am actually excited about heading for a 20 mile run.  Anxious is usually a better descriptor. But yesterday, I viewed this run as a nice slow way to see everywhere I love all by myself!

After getting in at about 12:15 and not actually going to bed until 1, the 6 am alarm seemed to come in a flash.  I got up, got dressed, scarfed a banana and shot out the door.

After this point it was pretty much all the same stuff back.  Thank goodness for the trail because it got very hot in a last 7 miles or so.  There was coverage until the last 2 and then I just had to suck it up.

The run went really well though.  It was so nice to be on the trail and the boardwalk, a little more forgiving surface than the pavement I am usually pounding.  I averaged 8:30 (which was faster than I was intending, but oh well) and I did my last mile in 8:10 so thats a good sign that I could still kick it in at the end in the heat.

I can’t believe I only have 2 more really long runs (both 20’s) until I start to taper (and I still haven’t missed a single run)!

Today, we are heading to the beach to see all the old guard friends and go for a beach run and then we are have a family barbecue.  Pictures to come!

 

 

 

 

 

 

 

 

 

What I Ate Wednesday

Yesterday was a fairly typical day, with fairly typical eats.  If it ain’t broke, don’t fix it right?

2013-07-16 11.20.20Lunch: I had packed a very hodge podgey lunch and decided last minute I wanted something a bit more substantial so I went to a new place that I have heard fantastic things about and got myself something.  Grilled Asparagus and Brie Panini with red wine and fig jelly…it was pretty much amazing.  Those in the Charleston area, check out Persimon Cafe, and don’t be fooled by the fact that it is in a laundromat (genius right)?!
